Richard
and Sarah Paul met at the Welsh Agricultural College and started
farming in Arncliff 15 years ago.
Carr Farm is
approximately 500 acres of grassland ranging from valley bottom
hay meadows at 700 feet above sea level, up steep valley sides
to rough limestone pastures on the tops at 1200 feet above sea
level. It is situated in the heart of the Yorkshire Dales National
Park and within the heart of the Yorkshire Dales National Park
and within the Malham-Arncliffe Site of Special Scientific Interest.
Over the past
15 years we have been invloved in various conservation projects
with English Nature and the Yorkshire Dales National Park. In
the spring of 2005 we joined the limestone Country Project.
The Limestone
Country Project aims to protect and improve some of Englands
most important wildlife sites by promoting the reintroduction
of native cattle breeds across Malham and Ingleborough areaas
of the Yorkshire Dales National Park.
Our herd of
24 Welsh Black Cows were all bought from pedigree herds in North
Wales. They graze the limesstone pastures throughout the year,
only coming down during winter to calve.
The beef animals
are butchered locally at CCM Quality Foods, a modern state of
the art licensed butchering facility at Skipton Auction Mart,
where it is left to hang and mature for a minimum of three weeks
to develop the full flavour. The results in producing quality
meat with very low 'food mileage'.
